Jargon, decoded

Dual boiler
Separate boilers for brewing and steaming, each held at its own temperature. You can pull a shot and steam milk simultaneously with no compromise on either.
Heat exchanger
One steam boiler with a brew-water tube running through it. Cheaper than dual boiler and steams well, but brew temperature is less precise and needs a cooling flush.
PID
A digital temperature controller that holds the boiler within about a degree of target — far more stable than a mechanical thermostat. Stable temperature means repeatable shots.
Rotary pump
A commercial-style pump that is quieter and smoother than a vibratory pump and usually allows plumbing the machine directly into a water line.
Flow control
Lets you vary water flow rate during the shot — gentle pre-infusion, pressure ramps — to tune extraction and tame difficult coffees.
